Fitou Les Quatre is a seductive, stylish red, rich in blackberry fruit and spice. For this wine, four of our vignerons have carefully chosen the best old vines from an exceptional vineyard site.
Le Pilou vineyard is the envy of the Fitou appellation. It is one of the highest vineyards, with ideal soil and exposure to the sun.
Proud owners of one of the best vineyards in the Fitou appellation, Robert, Christophe, Juliette and Jean-Régis have selected their best grapes from a small vineyard with old, low yielding vines and known locally as “le Pilou”. The vines are planted on soil of small rounded cobblestones or “Poudingues”. This exceptional vineyard is situated on the hills above the village of Paziols and looks across to the Pyrenees. Les Quatre is a good example of the very close work between the Mont Tauch cooperative and its 300 growers.
Tasting: A seductive, stylish red, rich in blackberry fruit and spice, with oaky notes. Les Quatre is full bodied and intense, with good tannic structure, reflecting the character of the old vines.
Serve at 17° C
The grapes of the four growers are vinified together after destalking. Vinification takes 60 days with malolactic fermentation taking place on the lees. Part of the wine is matured in new oak barrels for 9 months and the wine is then bottled between September and November and released 6 months later.
